I found the perfect treat to eat during your holiday movie marathon. Youโ€™re welcome ๐Ÿ˜Œ.

This is recipe has been in my drafts for so long, but I just never had all the ingredients on hand at once before. Well I do now, it finally happened, and it was just as amazing as I predicted it would be ๐Ÿคค.

๐Ÿซ Biscoff Sโ€™mores Baked Oats
– 1/2 cup (50g) ground oats/oat flour
– 1 Tbsp (7g flax meal traderjoes
– 1/2 tsp (3g) baking powder
– 1/2 tsp (3g) pumpkin pie or holiday spice mix (or sub cinnamon)
– pinch of salt
– 1/4 cup (60g) nondairy yogurt foragerproject (or sub 1/2 banana or 1/4 cup applesauce)
– 1/2 Tbsp (7.5ml) maple syrup
– 1/2 tsp (2.5ml) vanilla extract
– 1/3 cup (80ml) nondairy milk
– 2 lotusbiscoffus cookies, divided
– 2 Tbsp (20g) chocolate chunks (I used oat beverage chocolate imperfectfoods )
– 12-14 vegan mini marshmallows mydandies

1. To a medium bowl, add the oat flour, baking powder, spices, and salt. Stir.
2. Add the nondairy yogurt, maple syrup, vanilla extract, and nondairy milk and stir again.
3. Crumble 1 lotus cookie into the batter. Add in the chocolate chunks and vegan marshmallows, reserving a bit of each for topping. Fold into batter.
4. Pour the batter into an oven safe dish or ramekin. Crumble the remaining cookie over top. Dot on the reserved chocolate and marshmallows, pressing down lightly.
5. Bake or air fry at 350F/175C for 17-20 min.
6. Let cool a few minutes and enjoy!
