Here it is a la sophia_roe inspired dressing.

πŸ₯‘ spring mix
πŸ₯‘ mixed mini heirloom tomato
πŸ₯‘ cucumber
πŸ₯‘ beets
πŸ₯‘ avocado
πŸ₯‘ walnuts
πŸ₯‘ sunflower seeds
πŸ₯‘ sunflower sprouts
πŸ₯‘ fennel seeds for improved digestion

Dressing
🍴juice of one lemon
🍴zest of one lemon
🍴large minced garlic clove
🍴flavored salt & lemon pepper
🍴dijon mustard (to emulsify oil)
🍴white wine vinegar
🍴walnut oil

Mix all components of dressing before adding oil. Thinly stream in oil while whisking to thicken~πŸ₯’ add toasted, crushed nuts directly into your dressing too if you’d like.

More fixings ideas… hemp seeds, pumpkin seed, dried cranberry, vegan feta, pickled red onion, blood oranges!!
